CHRISTMAS SALAD

This 4 step Christmas salad is as good as it gets. It’s easy and delicious.

This fresh, crunchy and nutritious winter salad is perfect as a side or balance for some of the hearty dishes we stuff ourselves with over the holiday season. Or simply on its own as a filling lunch option.

Ingredients


Serves: 2 people
  • 2 cups Nordic Harvest baby kale

  • 2 cups Nordic Harvest mustard salad

  • 30g Sunflower seeds

  • 30g Pumpkin seeds

  • 1/2 cup pomegranate seeds

  • 1 apple (sliced thinly)

    Honey Balsamic Vinaigrette

  • 2 tablespoon balsamic vinegar

  • 2 cloves garlic, minced (optional)

  • 1 tablespoon white sugar

  • 1 tablespoon honey

  • 4 tablespoons olive oil

  • 1 /4 teaspoon sea salt

  • 1/4 teaspoon pepper

Preparations


Time needed: 5-10 minutes

Step 1

Roast sunflower seeds in a little oil on a hot pan, when they get golden brown, take them off the heat and let them cool down for 5 minutes.

Step 2

Remove the core from the apple and cut it into thin slices.

Step 3

Mix all the ingredients for Honey Balsamic Vinaigrette.

Step 4

Plate the salad as shown in the picture, drizzle with the vignarette

EASY GREEN POWER SMOOTHIE

This easy creamy, protein-packed green power smoothie is very simple to make and only takes a few minutes.

Have you tried using greens in your morning smoothie? It is the perfect way to make sure you get your daily allowance and add an extra vitamin boost to an already healthy and filling cocktail.

Ingredients


Serves: 2 people
  • 2 cups Nordic Harvest baby green kale

  • 2 cups Nordic Harvest baby spinach

  • 1 medium banana, peeled

  • 1/2 medium orange, peeled and quartered

  • 1/4 to 1/3 cup plain Greek yogurt

  • 1/4 cup almond milk, or unsweetened coconut milk

  • 1/2 cup mixed frozen berries

  • 1 tablespoon flaxseed

  • 1 -2 teaspoons pure honey

  • Squeeze of lime (optional)

Preparations


Time needed: 5 minutes

Step 1

Place all ingredients in a blender and blend until creamy, adding more coconut milk or fruit to thin the smoothie as needed. Serve immediately.

Pro tip: Using a frozen banana makes this really refreshing and thick. Enjoy!
