Philly cheesesteak sandwich
Rediscover The classic Philadelphian sandwich reinterpreted by Danish celebrity chef Jacob Jørgsholm.
A classic philly cheese steak sandwich consists of beef, baguette, onion, bell pepper and cheese. You can use many different kinds of meat for this sandwich. However, I would recommend some tender meat with a good fat content, such as. ribeye, which I use here.
Ingredients
2 Ribey steaks (approx. 180 grams each)
100 grams butter (softened)
1 clove of garlic
2 baguettes
2 onions
2 red bellpeppers
1 bunch parsley
2 tablespoons paprika
2 tablespoons mustard powder
1 teaspoon sugar
2 kinds of cheese (6 slices of each), I use Red Cheddar and Port Salut
4 tablespoons mayonnaise
Preparations
Time needed: 30 minutes
Step 1
Place the steaks in the freezer for approx. 10-15 minutes so they are easy to cut.
Step 2
Mix butter and crushed garlic until creamy consistency and room temperature.
Step 3
Cut baguettes in half (see video). Smear with a good layer of garlic butter and set aside.
Step 4
Cut onions into thin onion rings. Fry in a pan with olive oil over medium heat. Cut pepper into thin rings and add to the pan. Add the coarsely chopped parsley, 1 tablespoon paprika, 1 tablespoon mustard powder, 1 teaspoon sugar, salt and pepper. Cook approx. 10-15 minutes until all liquid has evaporated from the vegetables. Turn off the heat and set the pan aside.
Step 5
Take the meat out of the freezer. Cut into thin slices. Season with 1 tablespoon paprika, 1 tablespoon mustard powder, salt and pepper.
Step 6
Heat a LARGE pan. Fry the bread on the butter side until crispy, browned and delicious.
Step 7
Keep the large pan on the burner. Sauté the meat for approx. 5 minutes. Then add the fried vegetables. Divide into 4 equal portions on the pan. Turn down the heat and spread the cheese evenly over the meat/vegetable mixture.
Step 8
Smear the top of the bread with mayonnaise. Serve meat, vegetables and cheese on the other half. Fold the sandwich together and eat!

Danish Cowboy Toast
The Cowboy Toast (patty melt) is a classic in the realm of Danish fast food. Enjoy this modern spin on Danish culinary tradition.
Time for a real Danish fast food classic from when I was a child. A real cowboy toast. We came up with our own take on an innovative and greasy double-decker version of a cowboy toast. Remember to make time for half an hour’s rest on the couch after consuming this bad boy!
Ingredients
Plenty of butter for frying!
1 large onion
3 cloves of garlic
2 tablespoons brown sugar
2 dl garlic mayo / aioli
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
2 tablespoons Dijon mustard
400 grams minced beef (approx. 10% fat)
2 tablespoons onion powder
100 g grated cheddar
50 g grated mature cheese
6 slices of toast
2 eggs (optional)
Preparations
Time needed: 30 minutes
Step 1
Caramelized onions: Cut onions into large rings. Cut garlic coarsely. Fry on pan over high heat with a little olive oil, salt and pepper. After a few minutes on high heat, turn the heat down to medium. Add a tablespoon of butter and a tablespoon of brown sugar and let the onions soften.
Step 2
Dressing: Stir together garlic mayo, Worcestershire sauce, soy sauce, 1 tablespoon Dijon mustard and a tablespoon of brown sugar.
Step 3
Patties: Knead the meat together with salt, pepper and onion powder. Form 4 square patties, approximately one cm larger than the toast slices.
Step 4
Brown the patties in butter on a pan set over high heat for approx. 2 minutes on each side. Remove from heat and cover them in the two kinds of grated cheese.
Step 5
Assembly: Fry two pieces of toast in butter until golden brown and crispy (to be used as middle pieces)
Step 6
Butter a slice of toast with a little Dijon mustard. Then add a patty with cheese on top. Top with caramelized onions, the crispy slice of toast and plenty of dressing, another steak with cheese, soft onions and a final slice of toast.
Step 7
Fry on a medium hot pan for 5-8 minutes under pressure, turning once in the process. Add a fried egg if you feel like it!

Classic American DONUT
Everybody loves a classic American donut? But how would you go about making one at home? Find out here.
For a classic donut to shine, the dough itself must be delicious, soft and fluffy, while the frosting must be smooth and crispy. A simple and difficult dish to nail! See how I manage it in the recipe below.
Ingredients
280 g wheat flour
40 g cane sugar
6 salted almonds
120 g whole milk
140 g butter
8 g dry yeast
1 egg
1-2 L frying oil
350 g icing sugar
1 tablespoon vanilla sugar
Preparations
Time needed: 2 hours, 30 minutes
Step 1
Mix wheat flour, cane sugar and finely grated almonds in a bowl.
Step 2
Warm milk and 40 grams of butter to approximately 45 degrees Celsius. When the butter has melted, remove the pan from the heat. Whisk in dry yeast and eggs.
Step 3
Mix the wet ingredients with the flour mixture. Knead the dough together for approx. 15 minutes, until soft and elastic. See how I knead the dough in the video below.
Step 4
Cover the bowl with cling film and let the dough rise until doubled in size (approx. 1.5 hours).
Step 5
Roll the dough out on a table. The dough should be approx. 1.5 cm thick. Cut donuts out of the dough and place them on a piece of baking paper. Let them rise for approx. 20-25 minutes.
Step 6
Heat the oil to approximately 160 degrees Celsius. Fry donuts for approx. 2 minutes on each side.
Step 7
FROSTING: Warm 100 g butter in a pan. Turn off the heat. Whisk in vanilla sugar and icing sugar. If the frosting is too thick, you can gently whip in a little whole milk until you have the right consistency.
Step 8
Dip one side of the donuts into the frosting. Let them drip off for approx. 10 minutes until frosting is delicious and crispy.
